In a bowl, combine flour, boiling water, salt and oil. Mix together with a spoon to release some heat and bring the dough together, then transfer to a flat surface.

Knead the dough for 5-7 minutes until soft and smooth. Cover with plastic wrap and allow for rest for 10-20 minutes.

Divide dough into about 12 pieces. Roll each piece into a ball, then on a floured surface, roll them out very thin using a rolling pin. Once theyre as thin as you can get them, let them rest for 5 minutes.

Once rested, roll them out once more or pan them out with your hands until almost paper thin.

Place a skillet over medium heat, and place your tortilla into the skillet. Cook for 2-3 minutes on one side, until lightly browned on the bottom and bubbly. Flip for tortilla to cook the other side. It should puff up into a ball. Cook for another 2-3 minutes.
