Ingredients
For the Chai Spice Mix
2small pieces fresh ginger
1cinnamon stick
1teaspoonpeppercorns
1star anise
1tablespoondried rose petals
¼teaspoonclove
¼teaspoonnutmeg
1tablespooncardamom
For the Chai Concentrate
4cupswater
5teaspoonblack tea
2tablespoonmaple syrup
¼cup3.25% milk
For Blending
Frozen chai concentrate cubesfrom above
1tablespoonmaple syrup
1cup3.25% milk
For Serving

Instructions
Crush 2 small pieces of ginger, 1 cinnamon stick, 1 teaspoon peppercorns, 1 star anise, 1 tablespoon dried rose petals, ¼ teaspoon clove, ¼ teaspoon nutmeg, and 1 tablespoon cardamom in a mortar and pestle (or bowl) until well broken down and fragrant.
Toast the crushed spices in a pan over high heat for 20 to 30 seconds, stirring constantly and watching closely so they don't burn.
Add 4 cups water to the pan, stir well, and bring to a boil.
Remove the pan from heat once boiling, then stir in 5 teaspoon black tea, 2 tablespoon maple syrup, and ¼ cup milk. Let steep for 15 minutes until deeply fragrant and darkened in color.
Pour the steeped mixture into ice cube trays and freeze until fully solid, about 4 hours or overnight.
Blend the frozen chai cubes with 1 tablespoon maple syrup and 1 cup milk until smooth and creamy, with no ice chunks remaining.
Serve immediately in a glass, topped with whipped cream and a dusting of cinnamon powder.
