Ingredients
For the Chai Spice Mix
- 2 small pieces fresh ginger
- 1 cinnamon stick
- 1 teaspoon peppercorns
- 1 star anise
- 1 tablespoon dried rose petals
- ¼ teaspoon clove
- ¼ teaspoon nutmeg
- 1 tablespoon cardamom
For the Chai Concentrate
- 4 cups water
- 5 teaspoon black tea
- 2 tablespoon maple syrup
- ¼ cup 3.25% milk
For Blending
- Frozen chai concentrate cubes from above
- 1 tablespoon maple syrup
- 1 cup 3.25% milk
For Serving
- Whipped cream
- Cinnamon powder
Instructions
- Crush 2 small pieces of ginger, 1 cinnamon stick, 1 teaspoon peppercorns, 1 star anise, 1 tablespoon dried rose petals, ¼ teaspoon clove, ¼ teaspoon nutmeg, and 1 tablespoon cardamom in a mortar and pestle (or bowl) until well broken down and fragrant.
- Toast the crushed spices in a pan over high heat for 20 to 30 seconds, stirring constantly and watching closely so they don't burn.
- Add 4 cups water to the pan, stir well, and bring to a boil.
- Remove the pan from heat once boiling, then stir in 5 teaspoon black tea, 2 tablespoon maple syrup, and ¼ cup milk. Let steep for 15 minutes until deeply fragrant and darkened in color.
- Pour the steeped mixture into ice cube trays and freeze until fully solid, about 4 hours or overnight.
- Blend the frozen chai cubes with 1 tablespoon maple syrup and 1 cup milk until smooth and creamy, with no ice chunks remaining.
- Serve immediately in a glass, topped with whipped cream and a dusting of cinnamon powder.
