Ingredients
1teaspoonbaking soda
⅓cuplemon juice or lime juice
⅔cupheavy cream
4 ½cupscheese of choicecheddar works well, shredded
Instructions
Whisk together 1 teaspoon baking soda and ⅓ cup lemon or lime juice in a small bowl until combined. It will fizz slightly, that's expected.
Pour in ⅔ cup heavy cream and whisk until fully incorporated.
Transfer the mixture to a saucepan and set over medium heat.
Add the 500g shredded cheese one handful at a time, stirring constantly and letting each handful fully melt before adding the next. This takes about 8 to 10 minutes total.
Keep stirring once all the cheese is in until the mixture is smooth, thickened, and glossy.
Pour the melted cheese into a parchment-lined baking dish. Lay a second sheet of parchment on top and press down with your hands to spread it into an even, thin layer.
Refrigerate for at least 3 hours, or until fully firm, then cut into slices.
