I’ve tested dozens of popover recipes, but this 4-ingredient blender version is by far the easiest and most reliable method I’ve found.

Golden-brown blender popovers in a muffin tin, ready to eat. Perfect easy blender popovers recipe.

If you’ve never experienced the joy of biting into a freshly baked popover, you’re in for a treat. These light, airy rolls are perfect for filling with butter, jam, or even savory toppings.

The best part? They look incredibly impressive despite requiring minimal effort and just four basic ingredients.

Why This Easy Popover Recipe Works

Blender popovers with powdered sugar and strawberries on a plate, fresh from the oven.

What makes these blender popovers so special isn’t just their simplicity; it’s how consistently they rise into tall, dramatic towers despite requiring so few ingredients and steps. Here’s why this recipe works every time:

Using a blender creates the perfect batter consistency by incorporating air while ensuring everything is thoroughly mixed.

The two-temperature baking method gives popovers their signature rise, starting hot helps them “pop” up, while finishing at a lower temperature ensures they cook through without burning.

    Ingredients & Equipment

For something so impressive, the ingredient list couldn’t be more straightforward:

Ingredients for blender popovers: eggs, milk, flour, and a Ball jar.
    • Eggs: Provide structure and the rich, custard-like interior. Room temperature eggs work best for maximum rise.
    • Milk: Creates steam during baking, which is essential for that dramatic puff. Whole milk gives the richest flavor, but any milk works.
    • All-purpose flour: Provides the structure for the popovers. Measure by spooning into your measuring cup for accuracy.
    • Salt: Enhances all the flavors and balances the natural egginess.
    • Butter: Adds richness and helps create that irresistible golden exterior.

    For equipment, you’ll need:

    • A blender (standard or immersion both work well)
    • A popover pan or muffin tin
    • Cooking spray or additional butter for greasing

Minoo’s Pro Tip: No blender? No problem! Throw all your ingredients into a jar and shake really well. You’ll get perfect popovers with no blender needed.

    Step-by-Step Tutorial

    1. Blend your batter: Add eggs, milk, flour, and salt to your blender and blend until completely smooth – about 30 seconds. Add melted butter and blend again briefly until incorporated. The batter should be thin, similar to heavy cream.

Blender popovers being made: ingredients in a blender before and after blending.

    2. Rest the batter: Let your batter rest while you preheat your oven to 450°F. This rest time (even just 10-15 minutes) allows the flour to fully hydrate and results in higher popovers.

    3. Prep your pan: Place your empty muffin tin or popover pan in the preheated oven for about 5 minutes to heat up. This hot start helps create immediate steam when the batter hits the pan.

    4. Fill the pan: Remove the hot pan from the oven (use oven mitts!), quickly spray with cooking spray or brush with butter, and fill each cup about 2/3 full with batter. Don’t overfill – they need room to rise!

Spraying non-stick cooking spray into a muffin tin before pouring in blender popover batter.

    5. Bake in two stages: Bake at 450°F for 15-20 minutes until they’ve puffed dramatically, then reduce heat to 350°F (without opening the oven door) and bake for another 10 minutes until golden brown.

    6. Vent immediately: As soon as you remove them from the oven, poke a small hole in the side of each popover with a knife to let steam escape. This prevents them from becoming soggy inside.

Minoo’s Pro Tip: Whatever you do, don’t open the oven during baking! This sudden temperature change can cause your beautiful popovers to collapse.

    Serving Suggestions

These versatile popovers can be served so many ways:

For breakfast or brunch: Serve warm with butter and your favorite jam, or try them with Homemade 4-Ingredient Ketchup for a savory option with eggs.

    Variations and Substitutions

The beauty of this simple recipe is how easily it can be customized:

Herb popovers: Add 1 tablespoon of fresh herbs like thyme, rosemary, or chives to the batter.

Cheesy popovers: Fold in 1/4 cup of grated Parmesan, Gruyère, or cheddar cheese before baking for a savory twist.

Vegan popovers: Replace eggs with a flax egg substitute (1 tablespoon ground flaxseed + 3 tablespoons water per egg), use plant-based milk, and vegan butter. They won’t rise quite as high but will still be delicious.

Gluten-free option: Substitute a 1:1 gluten-free flour blend for the all-purpose flour. The texture may be slightly different, but they’ll still pop!

Minoo’s Pro Tip: For sweet popovers, try adding 1/2 teaspoon of vanilla extract to the batter and dusting with powdered sugar after baking, similar to my No Sugar Added Cinnamon Rolls.

    Troubleshooting Tips

Even though this recipe is nearly foolproof, here are solutions to common issues:

Popovers didn’t rise: Your oven might not be hot enough. Use an oven thermometer to check, and make sure to preheat thoroughly.

Popovers collapsed: You might have opened the oven door too soon. Wait until they’re golden brown before reducing the temperature.

Dense interior: The batter might have been overmixed, or the eggs were too cold. Room temperature ingredients make all the difference.

Stuck to the pan: Make sure to grease your pan generously, especially if you’re using a muffin tin instead of a non-stick popover pan.

    Frequently Asked Questions

Can I make the batter ahead of time?

While best made fresh, you can prepare the batter up to 30 minutes ahead and let it rest at room temperature. Any longer and you risk the popovers not rising as high.

Why do my popovers sometimes collapse?

Opening the oven door during baking is the most common culprit. Also be sure to pierce them immediately after baking to release steam.

Do I need a special popover pan?

No! While a popover pan gives the most dramatic height, a regular muffin tin works perfectly well too, as many readers have confirmed.

    Can I freeze popovers?

Yes! Cool completely, then freeze in an airtight container for up to 1 month. Reheat in a 350°F oven for 5-7 minutes until crisp.

How do I know when my popovers are done?

They should be dramatically puffed and golden brown. If you tap them, they should sound hollow.

These.are.FABULOUS! Served them with Goat Curry and Mango Chutney. They will be a regular treat in our house! Thanks for this. 🙂

      1. That makes me so happy to hear Cortney! Have you tried stuffing them with some whipped cream or cream cheese yet?

          1. You can either cut a hole in the top, cut them in half, or if you’re piping something into them use a piping bag poke a small hole in the bottom with the tip and pipe your filling in

I am so excited to have come across this recipe. I have family members that are Celiac so I could serve these with any meal for our bread. Amazing & cannot wait to make them. Thank you for sharing this recipe❣️

Great recipe – easy to make and great for an informal group get together. I filled half of them with a chicken/ mushroom mix and the others got a tomato/cheese/onion mix with melted cheese on top. Went down a treat. Next time I will try them with a sweet stuffing

      1. Those both sound absolutely delicious!!! going to have to give those a try too. And yes you definitely should try sweet next. You can even add some cinnamon and brown sugar right into the batter for the sweet ones.

    4. So these were super easy to put together, and they tasted good, but for some reason mine turned out very dense and looked kind of like corn read muffins. They didn’t look like the pictures- bot high or golden brown. What might I have done wrong? I used a regular muffin tin and a ninja blender and followed the recipe quantities. Would love to try these again to get them right. Thanks!

      1. Hi Catie!! That’s so strange. There are a few possibilities–
        1. Did you open the door of your oven while baking? Opening the oven door may have affected the rise and texture of your bread.
        2. Did you allow your muffin tray to preheat? This really helps with the rise and texture.
        3. Did you blend your mixture for long enough? Under mixing will not allow for enough an into your batter which can prevent it from rising nicely!

Hopefully one of these is helpful (:

    5. I really had no idea what I was making or how it would taste other than the description above. I made them in a jumbo muffin tin and the stated recipe gave me 4 popovers. I spread whipped strawberry cream cheese on it and they were scrumptious!! I will definitely make them again!

    6. I tried this but they came out way over done. Pretty much burnt, I followed the instructions to a tee. Don’t know what went wrong

      1. Susu, I’m sorry they overbaked on you! Popovers are pretty sensitive to oven temp, and if your oven runs even a little hot, they can go from perfect to overdone fast. I’d try reducing the temperature slightly next time or pulling them a few minutes earlier.
