Cream Cheese Filled Pear Muffins!

Ingredients 
 

  • 1 ½ Cups All Purpose Flour
  • Cup Sugar (or maple syrup, sweetener)
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 1 ½ Cups Pear Purée (Blended Pear) (Can also use Pumpkin Purée)
  • 1 teaspoon Pumpkin Spice
  • ¼ Cup Avocado Oil
  • 1 teaspoon Vanilla Extract
  • 1 Egg
  • Cup Chopped Walnuts (optional)

Cream Cheese Filling

  • 4 Ounces Cream Cheese (softened)
  • 1 teaspoon Milk
  • 1 teaspoon All Purpose Flour
  • 1 tablespoon Maple Syrup (or sugar, sweetener)

Instructions
 

  • In a bowl, whisk together flour, sugar, baking powder, baking soda, salt and pumpkin spice.
  • Make a well in the centre and add in your pear purée, oil, vanilla and egg. Whisk that all really well until everything is encorporated. Fold in your walnuts if using at the end.
  • Line a muffin tin with muffin liners and scoop your muffin mixture into each one, filling it about ⅔ the way full.
  • Make your cream cheese by combining softened cream cheese, milk, flour and maple syrup. Mix until smooth then transfer to a piping back or plastic bag with the tip cut off.
  • Press your piping back into the centre of each (unbaked) muffin and fill it with crram cheese.
  • Bake at 350℉ for 18-20 minutes then remove and allow to cool fully and enjoy!!

  1. Hi! I tried this recipe using pumpkin and it was amazing gone by day 2 (it was hard for us)

    Can almond flour be used as a substitute for all purpose?

    1. Hi Eloisa!! I’m so happy to hear your liked them. You can substitute it but you will not get the same muffin texture!
