  • 1 teaspoon blackstrap molasses
  • 2 cups water divided
  • 2 cinnamon sticks
  • 2 pieces orange peel
  • 2 pieces lemon peel
  • 2 pieces lime peel

  • ½ teaspoon nutmeg
  • 1 star anise

For Serving:

  • 1 tablespoon syrup per glass

  • Combine 1 teaspoon blackstrap molasses with 2 tablespoons of the water, then stir into 2 cups monk fruit sweetener in a heavy-bottomed saucepan. Heat over low, stirring constantly, until fully melted and slightly darkened, 3 to 5 minutes.
  • Pour in the remaining water (1¾ cups) and bring to a gentle simmer, stirring continuously until smooth.
  • Stir in 2 cinnamon sticks, 2 pieces each of orange, lemon, and lime peel, ½ teaspoon coriander seeds, ½ teaspoon nutmeg, and 1 star anise.
  • Simmer gently for 3 to 5 minutes, stirring occasionally, until the syrup lightly coats the back of a spoon.
  • Strain through a fine-mesh sieve into a clean jar. Let cool completely before refrigerating.
  • Serve by adding 1 tablespoon of syrup to a glass filled with ice. Top with sparkling water, stir well, and enjoy.

I tried making this yesterday and I am pleasantly surprised by the taste! I had to add more syrup than the recipe, but I like the taste and I like knowing what’s in it. And from what I’ve read, coke has nanoparticles in it and I quit them altogether. This is a nice alternative!

    1. Debbie!!! I'm so glad you tried this and enjoyed it (: I agree, I like knowing exactly where my food is coming from and what's going into it.
