Cheddar and Broccoli Soup Recipe!

  • 1 Diced Medium Onion
  • 1 Cup Shredded Carrots
  • 1 Cup Shredded Broccoli
  • ¼ Cup Flour
  • 2 Tbsp Butter (or plant-based butter)
  • 3 Cups 2% Milk (or plant based milk)
  • 2 Cups Chicken Broth (or plant based broth)
  • 1 Cup Cheddar Cheese (or plan-based cheese)
  • Salt, pepper, paprika, garlic powder, cayenne pepper (to taste)


  • Start by adding your butter to a pot over high heat, along with your onions. Saute for a few minutes until translucent, then add in your flour. Cook that down for 3 minutes.
  • Slowly add in your milk, followed by your broth, mixing constantly as you add them in. Bring those to a simmer, and add in your seasonings.
  • Reduce the heat to medium low, add in your carrots and broccoli, mix and allow that all to simmer for about 20 minutes with the lid off. After 20 minutes, your soup should be thickened and creamy. At this point you have the option to blend your soup with an immersion blender to get a more smooth soup, or just leave it chunky.
  • Turn off the heat and add in your cheddar. Mix until fully melted and enjoy!!
